Gondhoraj Hinted Grill Fish

  1. The fillet of fish is washed thouroughly and pat dried to soak out any excess moisture.
  2. The fish is marinated with chopped garlic,salt, pepper, kaffir lime juice & parsley.
  3. Sprinkle a little flour and grill the fish in a hot plate.
  4. Once the outer surface is sealed cover it with silver foil and put it in a oven for 5-7 mins.
  5. Saute onion, garlic, leek & celery in butter.
  6. Add the fish stock as per desired consistency of the sauce.
  7. Finish the sauce with a knob of butter, a dash of cream and finely chopped parsley.
  8. Prepare a olive-Mash, with boiled and mashed potatoes folding it with chopped olives and finish with butter & cream.
  9. Take out the fish from the oven, place it on the olive mash, as shown in the picture.
  10. Drizzle little olive oil and pour the sauce on top.
  11. Garnish as shown.
